Savory muffins with feta cheese, turkey and pepper

  • 250 gram flour for all uses
  • 2 spoon baking powder
  • 1 red pepper or 1 grilled Florin
  • 1 yellow pepper
  • 1 green pepper
  • 1 spoon salt
  • 2 spoon. chopped parsley
  • 160 ml light evaporated milk
  • 125 gram butter (1 stick) melted and warm
  • 1 egg
  • 100 gram slice feta into crumbs
  • 100 gr turkey
  • freshly ground pepper
  1. Preheat the oven to 170 degrees C. Wash and dry the peppers with absorbent paper and chop them. We steam them until they wilt. Sift the flour and baking powder into a bowl. Add the peppers, salt and parsley. In another bowl, put the milk, butter and egg and beat them with a wire or fork to combine. Make a well in the bowl with the solid ingredients and add the wet ingredients. Gently mix with a spoon. We don't work the mixture too much. Mix until liquids and solids are combined. Fill the cases halfway, add the feta cheese and the turkey and cover with the rest of the mixture. Bake for 12-15 minutes, until the blade of the knife comes out dry.
